Oreo Stuffed Chocolate Chip Cookies

Whoever came up with this idea is a total genius! Why didn't I think of this before?? An Oreo cookie inside of a homemade chocolate chip cookie is having "The Best of Both Worlds." 

I only made 2 of these yesterday when I made a batch of cookies for my husband, because if I didn't like them, I didn't want to waste my Oreos. That would have been a crime! :) But now I am wishing I had made more of them! They are pretty rich but very very good!


You'll need:
Cookie dough (homemade or store bought)
Oreos - I think double stuff would have been better

1. Mix up your cookie dough (if you have store bought, skip to number 2)
2. Take an Oreo and place a scoop of cookie dough on top and a scoop on bottom of the cookie. 
3. Make sure the dough covers the Oreo entirely. (it may crack or break some)
4. Bake at 375 degrees for 10 - 12 minutes 
5. Let cool and enjoy!!

Warning: These make very large cookies!

Here's my favorite!

1/2 cup sugar
1/2 cup brown sugar
1/3 cup butter
1/3 cup shortening
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
nuts (optional)
Chocolate chips

Cream sugars, butter, and shortening together. Add egg and vanilla. Add flour, baking soda, and salt. Mix in nuts and chips. Bake at 375 degrees for 8-9 minutes.


I also saw a suggestion for putting a nutter butter inside...What would you put inside your cookie?

Baby food bread

Got some leftover baby food? I have a YUMMY recipe for you to try!

My 9 month old has recently decided she does not want to eat baby food, she wants what mama is eating and nothing else! That doesn't bug me any, but what about the baby food in the cabinet? My mom gave me this recipe and it turned out soooo good!

1/2 cup vegetable oil
1 cup sugar
2 eggs
1 tsp baking soda
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/3 tsp ground cloves
1 3/4 cup flour
2 (4 oz) jars baby food

Cream together the oil, sugar, and eggs. Mix together dry ingredients. Add dry mixture to creamed mixture alternating with baby food. Pour into greased and floured bread pan. Bake at 350 degrees for 50 minutes.
 
I used a pyrex pan since i don't have loaf pans, and I just shortened the time down to 35 minutes. The recipe originally called for prune baby food, but I used Apple and Blueberry and it was great! I bet you could use just about any baby food! Even my husband and my sister ate it! It was very moist!


See? Almost gone! (I probably ate most of it myself! LOL!)

Cinnamon Doughnut Muffins

I was in a muffin mood this morning. Why, I'm not really sure, but I decided to go for it! Nothing better than warm muffins for breakfast! The recipe I decided to try out was Cinnamon Doughnut Muffins.

I love love LOVE cinnamon! I tend to put more than the recipe actually calls for! 

Here's how they turned out!

Cinnamon Doughnut Muffins

  • 1 3/4 cups all purpose-flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • Jam
Topping:
  • 1/4 cup butter, melted
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
1. In a large bowl, combine flour, baking powder, salt, nutmeg, and cinnamon. In a small bowl, combine the sugar, oil, egg and milk. Stir into dry ingredients just until moistened.

2. Fill greased or paper-lined muffin cups half full; place 1 teaspoon of jam on top. Cover jam with enough batter to fill cups three-fourths full. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted 1 inch from the edge comes out clean.

3. Place melted butter in a small bowl; combine the sugar and cinnamon in another bowl. Immediately after removing muffins from the oven, dip tops in butter, then in cinnamon sugar. Serve warm.

So I ended up making a few adjustments to the recipe. Of course, more cinnamon. I didn't have nutmeg, so I just left that out. And my husband isn't crazy about the jam, so I just left that out too. One more adjustment I had to make was the milk. My husband drank it all.....again. So instead of milk, I used sour cream in the same measurement as the milk, and added water as needed to make the batter more like batter and not dough. You couldn't tell! Cream cheese also works great.

The tops were absolutely the best part! The butter, cinnamon and sugar gave a sweet crunch to the top! Even the little Jellybean liked them!
